This new book contains experiences, tips, advice from those who have already done it.  A must-have for any aspiring or current chocolatier and chocolate maker.

Are you interested in chocolate and confections as a small business? There are many how-to books on starting an enterprise, but often the best advice comes directly from those with actual experience. Thus came the idea for this book; this “primer.” Why not ask chocolatiers firsthand what they have experienced and what they recommend? With this concept in mind, we composed a set of key questions and asked them to interesting artisans from around the world with experience in both the business and creative sides of chocolate. Their answers on creativity, product, branding and business are very frank and often personal, and written in a journal or diary style. The information in the resulting primer is worth its weight in gold.

World Dog Surfing Championships scores its 4th Year of Fun

The competition was strong, the waves variable, the weather mild, the dogs stoked, and thousands of fans of the sport enjoyed the 4th Annual World Dog Surfing Championships in Pacifica near San Francisco, where over 3 dozen top dog surfers participated in the event.

WINE and TRAVEL: Taste and Sip in California Sierra Foothills Wineries

California is home to dozens of distinct wine regions, including some of the world’s most famous destinations. But hidden among even the high-profile appellations are the wine roads less traveled featuring stunning rural scenery, delicious wines and, often, fewer visitors. To help consumers discover new wines and wineries this summer, Wine Institute’s California Wine Country Back Roads series highlights off-the-beaten path wine roads and regions.

SIERRA FOOTHILLS WINE REGION

The California Gold Rush from 1848-1855 occurred in the heart of the Sierra Foothills wine region which covers 2.6 million acres of rolling hills, old mining towns and several of the coolest and highest elevation vineyards in the state. The region is a haven for small, family-run wineries known for their rich history, 100-plus-year old grapevines and full-bodied red wines, located throughout eight counties—Amador, Calaveras, El Dorado, Mariposa, Nevada, Placer, Tuolumne and Yuba. Here, visitors can enjoy pairing the latest vintages with some of California’s spectacular scenery, as this wine region has three national parks and 20 wilderness areas that include Yosemite National Park and Lake Tahoe.

TASTE: The Sierra Foothills region is home to more than 200 wineries and a diverse range of grape varieties. Amador County, tucked into the western foothills of the Sierra Nevada mountain range, includes more than 40 wineries—many specializing in Zinfandel, Barbera and Rhône-style wines. In Calaveras County, where Mark Twain gave the county its claim to fame with his bestselling story “The Jumping Frog of Calaveras County,” there are more than 25 tasting rooms on the charming Main Street of Murphys. El Dorado County, with its mountain vineyards perched high above the valley, features 70 wineries producing everything from Cabernet-based varietals to wines made from Rhône, German, Italian and Spanish grape varieties. Back-road gems can also be found in Nevada County, Placer County and Yuba County. For a taste of several sub-regions, take a scenic excursion up historic Highway 49. The road begins in Oakhurst, then winds its way north through several winery-rich counties, including Amador, Calaveras, El Dorado, Nevada and more.

TOUR: Celebrate local wine, food and agriculture June 20-21 during the Placer Wine Trail’s Grape Days of Summer, a self-guided tour that features food, music and educational experiences at every stop in Placer County. Amador County’s annual Barbera Festival in September during California Wine Month offers tastes from more than 50 local wineries, plus fabulous food, live music and artisan vendors. Also, in September is the WineDerLust Renegade Wine Festival in Placerville, a wine bazaar and concert showcasing the best of El Dorado wines.

Travel: The DOUGLAS Hotel in Vancouver is Luxurious and Eco-Friendly

The DOUGLAS – a first-to-market Autograph Collection Hotel in downtown Vancouver – is challenging guests to take advantage of “Conserve Together”, an initiative that incorporates sustainability into overnight stays to support the re-population of Canadian forests.

The DOUGLAS, an Autograph Collection Hotel, masterfully reconnects people and place, while seamlessly introducing nature into an elegant, urban environment.

Creating a balanced dialogue between nature and city, the DOUGLAS pays homage to the Douglas firs that laid the foundation for Vancouver’s thriving economy. With a focus on reconnecting people and place, the DOUGLAS strives to implement a sustainability program that encourages travelers to prioritize the environment. “Conserve Together” promotes waste reduction by challenging guests to opt out of daily housekeeping service, for two consecutive days. For each non-housekeeping day, guests are rewarded with 500 Marriott Bonvoy Bonus Points or a tree planted on their behalf; on every third day, the guest’s room is serviced and/or a wellness check is performed. The option is open to all visitors regardless of rate plan or booking method; guests must stay a minimum of two nights to take advantage of the offer.

The DOUGLAS staff encourages every visitor not only to participate in “Conserve Together”, but also to choose tree planting over bonus Marriott Bonvoy points. For every guest who selects the former, the hotel promises to double the number of trees planted. To further personalize the initiative, guests are invited to dedicate their tree to someone special (or to themselves). The dedication will appear on an interactive map depicting a cartoon forest with labels pointing to each guest’s tree.

Conserve Together” trees are planted in the Ann and Sandy Cross Conservation Area near Calgary, Alberta by Carbon Farmer, a partner of the DOUGLAS working to repopulate Canadian forests. As of April 1, the DOUGLAS and Carbon Farmer have planted 1,114 trees, creating 4,554 square metres of new forest.

 

“Earth Day is an important reminder that although environmental preservation is a global responsibility, each person can make a real difference,” said Sean Outerbridge, Director of Room Operations for the DOUGLAS. “Thanks to ‘Conserve Together’, every guest passing through the DOUGLAS will able to support our commitment to making cities greener and forests stronger.”
