Mango Bread Recipe from the South Beach Mango Festival

The first South Beach Mango Festival takes place August 5, 2018, from 11 a.m. – 7 p.m. at South Beach’s beautiful, white sandy beach in Lummus Park, adjacent to Ocean Drive. www.SobeMangoFest.com

South Florida wants to commemorate and celebrate the importance and peak of its famed fruit. The event is aimed at tropical fruit lovers and culinary enthusiasts, as well as the domestic and international visitors who flock to South Beach. The event will also benefit a vital non-profit philanthropic organization, Big Brothers and Big Sisters.

Visitors will have the opportunity to continue to educate themselves on healthy eating options and alternatives, using mango in their recipes, with activities including a farmer’s market offering more than 40 varieties of juicy, sweet, locally farmed mangoes; mango tastings; cooking classes for kids and adults, featuring the golden fruit; a children’s play area; and an entertainment area with live music and dancing; top chef demos, and a memorable mango-mixology competition.

South Beach Mango Bread Recipe

Ingredients to Serve-10 slices

¼ Cup Butter
¾ cup Sugar
2 Medium Very Ripe mangos pureed
1 Large Egg, slightly beaten
1 Teaspoon Pure Vanilla extract
2 Tablespoons Lime juice
1 ½ Cups All purpose flour
1 ½ Teaspoon Baking powder
½ Teaspoon Baking soda
½ teaspoon Ground cinnamon
1 Cup Chopped walnuts

 

To prepare the batter: In a large mixing bowl cream the butter and sugar. Add the mango, egg, vanilla, and lime juice. In a separate large bowl, combine the flour, baking powder, baking soda and cinnamon. Add the mango mixture to the flour mixture stirring until the dry ingredients are just moistened.

Stir in the walnuts.

To bake the mango bread: Preheat the oven to 350 degrees. Coat a 9x5x3 inch non stick pan with non stick cooking spray. Pour the batter into the prepared loaf pan. Bake for 40 minutes, or until a toothpick inserted into the center, comes out clean. Cool in the pan 10 minutes before removing from the loaf pan. Allow to cook for 1 hour on a rack before serving.

Chef Adrianne’s Recipe for Roasted Vegetable Beef Stew

If you are feeling a little chilly on the outside or on the inside, this beef stew will melt even the coldest of hearts. Beef stew is a tried and true classic, yet this one has a few twists that add some unexpected tastes to a staple of seasonal dishes. Miami’s Chef Adrianne’s Maximum Flavor version throws in another dimension by roasting the vegetables before adding them to the stew for braising. This includes two different kinds of squash, ensuring that your taste buds will go for a warm and delicious flavor ride.

RECIPE: Roasted Vegetable Beef Stew

Serves: 6-8

Ingredients:

  • 3 lbs boneless beef chuck cut into 1-1/2-inch pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup all purpose flour
  • 3 tablespoons extra virgin olive oil
  • 2 yellow onions, cut into 1-inch chunks
  • 10 cloves garlic, peeled and smashed
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons tomato paste
  • 2 cups dry red wine
  • 2 cups low sodium beef broth
  • 2 cups water
  • 3 bay leaves
  • 1/2 teaspoon dried thyme
  • 1-1/2 teaspoons sugar
  • 4 large carrots, peeled and cut into 1/2 inch slices
  • 1 pound Yukon potatoes, cut into 1/2 inch cubes
  • 1/2 cup celery, chopped
  • 1 cup butternut squash, cubed
  • 1 cup acorn squash, cubed
  • 1/2 cup green peas

 

Directions:

Preheat the oven to 400 degrees F. In a large bowl, toss carrots, potatoes, celery, and squashes with a bit of olive oil. Sprinkle with salt and pepper to taste. Place in a roasting pan and bake for 15-18 minutes. Meanwhile, season beef with salt and pepper then toss in flour. Shake off excess. In a large Dutch oven or large pot, heat 1 tablespoon of the olive oil over medium-high heat, brown the meat in 3 batches being careful not to overcrowd.

Transfer the meat to a large plate and set aside. Add the onions, garlic and balsamic vinegar; cook, stirring with a wooden spoon and scraping the brown bits from bottom of the pan, for about 5 minutes. Add the tomato paste and cook for 2 minutes more. Add the beef with its juices back to the pan. Add the wine, beef broth, water, bay leaf, thyme, and sugar. Stir with a wooden spoon to loosen any brown bits from the bottom of the pan and bring to a boil. Cover the pot with a lid, transfer to the preheated oven, and braise for 2 hours.

Remove the pot from the oven and add the roasted vegetables and peas. Cover and place back in oven for about an hour more. Serve the stew hot, or let it come to room temperature and then store in the refrigerator overnight or until ready to serve. This stew improves in flavor if made at least one day ahead.

Two Great Recipes from the Grilled Cheese & Beer Cookbook

Recipe #1: Johnny Apple Cheese

Ingredients:
2 slices whole grain bread
4 slices Adirondack cheddar cheese
1 granny smith apple
3 strips of bacon

Directions: Grease one side of each slice of bread and place in a pan on medium heat, greased side down. Place the cheddar on the bread so that all of the bread is covered. Thinly slice the granny smith apple and place it on one slice of bread so the cheese and bread are completely covered. Add bacon strips to the other slice of bread and cheese. Once the cheese is melted, put the sandwich together and tada! You are all set.

Beer Pairing: This one has a lot to work with for something so simple. A good European-style lager will do well to complement the sharpness of the cheddar and the smoky flavor from the bacon. Heineken and Grolsch would both do fine, but for those looking to accentuate the apple, why not try it with a cider? Although not beer, anyone trying this on a warm sunny day shouldn’t shy away from a nice Angry Orchard or Naked Flock to hit the notes a beer wouldn’t.

 

 

Recipe #2: Ménage à Cinq

Ingredients:
3 slices of sourdough bread
2 slices of cheddar cheese
1 slice mozzarella cheese
1 slice of Muenster cheese
1 slice pepper jack cheese
1 slice provolone cheese
1/4 avocado

Directions: Grease one side of each slice of bread and place in a pan on medium heat, greased side down. Cover all three slices with cheese (in no particular order). Once the cheese is melted, put avocado on two slices. Slap it together and enjoy!

Beer Pairing: This is our ode to one of our favorite show, The League. Except, instead of it being Andre’s swanky wine bar, it’s a delicious sandwich paired with a light refreshing lager—one with some punch behind it. Otter Creek’s Citra Mantra is a pretty good bet if you can find it. If not, the guys on the show always prefer Stella Artois or Bud Light. Old post office boxes are a pretty sweet idea for a bar, though. Right?

Smashed Brussels Sprouts

These days brussels sprouts are most often enjoyed after having been roasted or baked. Adorned with olive oil and salt and pepper, brussels sprouts cooked this way a delicious and hard to resist. However, sometimes you want a different way of eating of this vegetable favorite, and eating boiled brussel sprouts as they did back in the 1950s is not an option. Fortunately, we have discovered a new recipe for brussels sprouts, where they’re boiled and baked and smothered in cheese.

Ingredients

  • Brussels sprouts
  • Grated cheese
  • Olive oil
  • Salt and pepper
  • Optional: garlic powder

Directions

  1. Heat oven to 425°
  2. Cook brussels sprouts on top of stove boiling water for 10 minutes
  3. Spread wax paper across the surface of an oven safe Baking tray
  4. Drain brussels sprouts, and spread evenly on top of the wax paper
  5. Using the back of a tablespoon gently smash down each brussels sprout until somewhat flat
  6. Sprinkle salt, pepper, and garlic powder on top of the brussels sprouts
  7. Lightly drizzle brussels sprouts with olive oil
  8. Sprinkle grated cheese across the tops of the brussels sprouts
  9. Bake for 15 to 20 minutes in the oven.
