SELECTED JUDGE'S COMMENTS

Amella Vegan Caramel, Vivian Bomboneria and Valenza do a fabulous job Marti, Vivian, Amara and Plumeria Flours each had something that set themselves apart that was appealing and memorable.
This is a loaded question, but I will answer by saying my standout chevre related treat was presented by Truffles and Toffee--their cherry almond goat cheese truffle. Perhaps b/c it was the raw goat chevre that differentiated if from the rest of the pack--complex and rich. My other fav that I saw as a perfect gifting item (not pkg) was Marti's creme brulee truffle on a stick--excellent crisp shell with the morsel of creme delishness on the inside--loved this and kept thinking about it after I left the salon. David Bacco's drinking chocolate was excellent, as was their entire line. Marti's line of truffles always impresses. Amano continues to be an outstanding cornerstone of this event. What a great mix of returning and new chocolatiers!
Detailed Comments by Judge Jane Park Smith, Ms. America: The new vendors were quite good, especially Vivian Bonboneria, that had a super standout truffle, that was a close second choice after Truffle & Toffee's cherry-almond goat truffle... Vivian presented a Ginjinha truffle shaped as dark chocolate lips with a portuguese liquor, cherry, and port wine combination that was remarkable and enticing. Perhaps it was intended to seduce folks into trying other items...I most certainly did. The green tea truffle was the most true matcha essence at the show without overwhelming me with the "green"-ness on the tastebuds this tea can impart...and then I appreciated their white chocolate truffle with pineapple or tropical fruit inside--along with the softened texture of the fruit. Too many liquid fillings get tiresome after a while. Although, when it comes to Fera Wyn's Limoncello truffle, I'll take more of that anytime! I so wish I could have also voted for Choctal's Indonesian Vanilla and Chocolate ice creams, but Amara's El Dorado Square with mixed praline covered in dark chocolate with gold dusting edged out the ice cream with it's delightful crunch as well as the slightly resistant could like texture for the Best Comfort food/snack product. Loved this item by Amara... wish I had more to eat right now (but am relieved I can recuperate from my daylong sugar high!) Speaking of sugar, I would love to see more alternative sweetener (stevia, monk fruit, erythitol... or even coconut crystals) chocolates offered by veteran or newbie vendors as America deals with increasing health concerns that sugar impacts quite unmistakably. Lastly, as as lover of fine chocolates and those who take care of the land it comes from, I must support Amano for their consciousness toward their cacao famers and I am sad to hear that their superb Morobe chocolate bar will be limited and gone too soon. The land in Pagua New Guinea is being replanted to grow trees for production of palm oil. Alas, the unique palate uplift of red grapefruit and lime will simply be s bygone memory -- a treat felled by higher profit margins. I am glad to have had the the opportunity to taste this chocolate bar and get a flavor of the terrain of origin.
