RECIPES: Korean Hot Bite Burger & Orient Cheese Excess Burger from Chef Elizabeth Haigh

Every season is burger season, and a great burger recipe goes over the top when you add cheese a a few imaginative ingredients.

Jarlsberg® Cheese has shared with TasteTV two recipes for delicious cheese burgers from internationally acclaimed chef Elizabeth Haigh, considered as a shining star on the London culinary scene.

Korean Hot Bite Burger

Ingredients

• 4 brioche buns
• 2 large seitan steaks (cut into 4 pieces, roughly the same size as the buns – or alternatively use large portobello mushrooms)
• 1 pack of ramen instant noodles
• 1 tbsp garlic powder
• 1 tbsp onion powder
• 1 tsp ground white pepper
• 1 tsp paprika
• 300 g white flour
• 1 tbsp nutritional yeast
• 2 tsp mustard powder
• 200 ml buttermilk
• 4 slices of cheese (for example, Jarlsberg® Original, Lite or Special Reserve)
• 80 g vegan kimchi (shop-bought)
• 100 g mayonnaise

Preparation

  1. Mix the flour, mustard, garlic, onion powder, paprika and nutritional yeast in a bowl.
  2. Pulse the ramen noodles in a blender until crushed, or crush using a pestle and mortar. Then add to the flour mixture.
  3. Heat a fryer or vegetable frying oil to 180 °C.
  4. Coat the seitan steaks (or mushrooms) in the spiced flour mixture, then dip in the buttermilk to coat, then once again in the flour mixture. Set aside for a couple of minutes before frying.
  5. Fry the buttermilk-coated seitan steaks until golden (roughly 5-6 minutes), turning occasionally. Once fried, set aside on kitchen paper to soak up any excess oil.
  6. Top the seitan steaks with Jarlsberg® and toast under a grill until melted.
  7. Toast the brioche bun halves until golden, then add mayonnaise to both sides.
  8. Assemble your burger by adding the fried cheesy seitan steak, then toppping with vegan kimchi to finish.
  9. Serve immediately and enjoy!

Orient Cheese Excess Burger

Ingredients

• 800 g minced beef
• 4 slices of cheese (such as Jarlsberg® Original, Lite or Special Reserve)
• 2 tbsp gochujang paste (or other red chilli paste)
• 100 g mayonnaise
• 2 ruby gem lettuces (washed and separated into leaves)
• 80 g kimchi
• A few pickles (pickled turnips/gherkin)
• 4 brioche burger buns
• 50 g aged beef dripping
• 1 watermelon radish (peeled)
• 4 marrow bones (marrow removed and finely chopped) – optional

Preparation

  1. Put the minced beef into a bowl and season well with fine sea salt.
  2. For extra juicy and moist burgers, mix the marrow with the minced beef in the bowl.
  3. Portion the minced beef into 200 g balls and then shape them into 4 burgers.
  4. Heat the beef dripping in a frying pan or skillet and fry the burgers for a couple of minutes (roughly 3 mins) on each side. Top each burger with a slice of cheese and place under the grill to melt until the cheese is bubbling and colored.
  5. In the meantime, prepare the gochujang mayonnaise by mixing the mayonnaise and gochujang paste together.
  6. Finely slice the watermelon radish using a mandolin, then cut into small julienne sticks. Set aside until ready to assemble your burger.
  7. Gently toast the brioche buns (cut side up) under the grill until golden, then start assembling your burger.
  8. First add a generous tablespoon of gochujang mayonnaise to each half of the bun, add a slice of lettuce, then the burger topped with cheese, followed by a combination of kimchi, pickles and radish to finish. Enjoy!
