Moon Cheese Snacks combine high-tech and tasty fromage

How difficult do you think if could be to dehydrate a slice of cheese, then make it crispy and put it in a bag for the world to enjoy? Quite a bit, it turns out. So much so that a new technology had to be utilized for Moon Cheese Snacks to be created and launched.

The joint partnership that owns Moon Cheese, NutraDried, says they have “crunchified” the actual cheese in the product, which is pretty much the only ingredient: Cheddar Cheese [Pasteurized Milk, Cheese Culture, Salt, Enzymes, Annatto (Vegetable Color)].

Says the firm: “Dr. Tim Durance, Chairman and co-CEO, EnWave Corporation is the innovator behind the company’s dehydration technology. While at the University of British Columbia in 1996, Dr. Durance developed the first prototype Radiant Energy Vacuum (“REV”) machine for dehydrating food and nutraceuticals…Using patented technologies we remove only the moisture from cheese while keeping all the nutrition and flavour.”

There are currently three flavors of Moon Cheese available: American Cheddar, Pepper Jack and Gouda

Coup D’Etat brings Haute Couture to Holiday Interior Design

High-end interior design studio and gallery Coup D’Etat has created a winter wonderland inside of the shop this season, complete with glass encased moose wandering among snow covered trees. The scenario even has its own pine-based scent, custom created for Coup, and which we hope they will one day sell, as it is fantastic.

Coup D’Etat regularly changes its collection and layout, giving it a “living museum” quality, although everything is for sale. The store has impeccable taste and design aesthetics, and an uncanny ability to discover talented furniture makers from across the world.

As the show in the store windows change regularly, we will be back to bring you their next incarnation.

Black Ink Wine launches

In late 2014, Chilean and Argentine wine importer TGIC Global Fine Wine Company released their new California red wine, entitled “Black Ink.”

With the dark bottle, faded black label, and octopus logo on the side, it is clear that this wine is a very dark red blend with a sense of mystery tinged with humor.

As they describe it, “Black Ink is an ode to fantasy through the arts, portraying elegance with an edge. In a celebration of decadence, juicy blackberry cobbler meets smoky licorice with a hint of spice. The capsule is marked with the allusive squid in a nod to the deep dark red hues within the bottle.”

The wines are priced at around $9.99

The 5th Annual Fall Chocolate Salon in San Francisco was a delight for chocolate and wine lovers. Despite the challenges of a rare morning rain in California (during a drought), the attendees still managed to come out and join the fun.

The event featured over 30 chocolatiers, confectioners, and wineries, and is the premier Fall chocolate event on the West Coas, including Neo Cocoa, Gâté Comme des Filles Chocolats, Amella Caramels, Truffly Made, Cowboy Toffee Co., Taza Chocolate, Endorfin Chocolat, La Châtelaine Chocolat Company, Fera’wyn’s Artisan Chocolates, flying noir, Claudia Marie Design, Jerk’n Pickle, Amano Artisan Chocolate, Kindred Cooks, CocoTutti, The Tea Room Chocolate Company, Cocoa Vida, Kika’s Treats, Marich Premium Chocolates, Quail Point Chocolate, Socola Chocolatier, Twisted Roots Vineyard, Raff Distillerie, Sottomarino Winery, Rosa D’Oro, Gourmet Blends, Farm Fresh To You, Meetup.com, Winery SF, and Chocolate Television.

Also participating was Jessica Ferraro, of Bar Cacao, who had a fascinating and well-attended presentation on the changes and trends in the Craft Chocolate Movement.
