Eggless Scrambled Eggs: The Hijiki Tofu Scramble

If you are like many people and are currently on an eggless diet, but really love scrambled eggs, then an alternative is scrambled tofu. BStar Bar & Restaurant in San Francisco’s Inner Richmond Clement Street Corridor has a delicious Hijiki Tofu Scramble with tomato, shiitake, ginger, daikon sprouts, avocado. In the photo you’ll see it is a bit yellow, because we added Monterey Jack cheese to it, and shortly, the avocado and sprouts will be incorporate into the entire dish.

The pink items, by the way, are ginger. You probably do not want to add those to your mix.
