Chef Calvo’s Hawaiian Nachos Recipe

If you are looking for comfort food with an exotic twist, food that might bring you flavors that remind you of a great vacation, look no further than Chef Adrianne Calvo‘s recipe for Hawaiian Nachos + Pineapple Avocado Relish + “Lava” Aioli.

Hawaiian Nachos + Pineapple Avocado Relish + “Lava” Aioli

Serves: 2

Ingredients:

2 Corn Tortillas, Quartered, Fried Crispy

2 garlic cloves, minced
1 tablespoon cilantro, minced
1 teaspoon lime juice
1 teaspoon honey
1/4 cup mayonnaise

1/4 lb Blue Fin Tuna, fillet
1 teaspoon brown sugar
1 teaspoon garlic salt
1 teaspoon black pepper

1/4 cup Pineapple, chopped
1/4 cup Hass Avocado, chopped
1 tablespoon cilantro
Pinch kosher salt
1 teaspoon lime juice
1 teaspoon black sesame seeds

1 tablespoon mayonnaise
1 teaspoon ketchup
1/2 teaspoon cayenne pepper
1/2 teaspoon horseradish
1 teaspoon Tabasco hot sauce

Scallions for garnish

Directions:

Preheat fryer to 375 degrees F. Season Tuna fillet with brown sugar, garlic salt, and pepper. In a hot skillet with a small amount of canola oil almost to the smoking point, sear tuna on all sides quickly, and set aside. Allow to cool for 10 minutes. Wrap tightly in plastic wrap and place in the freezer for 15 minutes for easy slicing. Meanwhile, in a small mixing bowl whisk garlic, cilantro, lime juice, honey, and mayonnaise. Set aside. In another mixing bowl, combine Pineapple, Avocado, cilantro, salt, lime, and black sesame seeds. Set aside. In another mixing bowl, whisk together mayonnaise, ketchup, cayenne pepper, horseradish, and Tabasco. To assemble, slice Tuna 1/4 inch thick. Place a small dollop of garlic cilantro sauce on crispy tortilla, place Tuna on top. Add a spoonful of the Pineapple Avocado Relish and then top with lava aioli. Garnish with scallions.

TASTE AWARDS Winner Kid Chef Eliana Wins Food Network’s Chopped Teen Tournament Battle 4

16-year-old Kid Chef Eliana (Eliana de Las Casas), TASTE AWARDS-winning chef, cookbook author, and radio show host, is a competitor on Food Network’s Chopped Teen Tournament. The tournament has 16 teens battling for a cash prize of $25,000. Kid Chef Eliana won Battle 4 of the series and moves on to the finale, which airs on Tuesday, September 20, 2016 at 9pm CDT.

The incredibly popular show with millions of viewers pits contestants against each other while trying to master ingredients revealed in a mystery basket. In Chopped Teen Tournament, there are four contestants in each battle with three rounds: appetizer, entrée, and dessert. Each contestant receives the same ingredients and are given 30 minutes to transform the ingredients into dishes presented to three celebrity chef judges. If the judges deem the dish unsatisfactory, the contestant is “chopped.” The winner of each battle in Chopped Teen Tournament advances to the grand finale on Tuesday, September 20, 2016 to compete for $25,000.

Eliana says, “I am thrilled that I won Battle 4 of the competition but more importantly, I made awesome new friends both on screen and off. The other teen chefs I competed with are crazy talented and I am grateful to have made it this far. The love and support from my family, school, and community have been overwhelming.”

Eliana will have a public viewing party at Poseidon Restaurant, 2100 St. Charles Avenue in New Orleans, where she will host a meet and greet and book signing. The Asian restaurant boasts large screen televisions and four fun karaoke rooms. Five of the best Mexican chefs known internationally for their trend setting culinary art will highlight the best of the new tendencies in high Mexican cuisine with the Best of Mexico Riviera Maya. The event will be held from October 5 to 9 at the AAA Five Diamond Grand Velas Riviera Maya.

The exclusive resort invited the prestigious chefs including Zahie Téllez, Carlos Gaytan, Francisco Ruano, and Mikel Alonso to share their creativity, talent and passion for Mexican cuisine through this gastronomic event. The event is a 10-course tasting menu, original dishes featuring ingredients and seasonings from all of Mexico. A former contestant on BRAVO’s Top Chef, in 2011, he was named the chef of the year by the American Culinary Federation.
