LUXURY HOLIDAY RECIPE: A Tender Rack of Aussie Lamb

Sometimes you can overdo the recipe for a great piece of meat, especially one that is as delicious as a cut of Aussie lamb. That is why this TasteTV Kitchen‘s recipe only relies on a handful of ingredients and prep.

Although we are huge fans of American lamb, we cannot walk away from a tasty source like Australia. Australia is known for many culinary treats, and one of them is great lamb. Aussie grass fed beef and lamb is  healthier than some other sources and types of meats, and is very time efficient to cook, often reducing meal prep time by 30%.

Australia ranchers also have made a large effort to be more sustainable. In a study over the last 30 years, Aussie ranchers have:

  • Reduced their water use by over 65%
  • Reduced their animals’ greenhouse gas emissions intensity by 14%

It doesn’t make the meat taste better, but it definitely helps satisfy your soul.

Easy Rack of Lamb

Ingredients

  • 1 Rack of Lamb
  • 3 Tablespoons of extra virgin olive oil
  • 2 teaspoons of kosher or sea salt
  • 2 teaspoons of garlic powder
  • 1 teaspoon of Oregano (dried or fresh)
  • 1 teaspoon of  Rosemary or Thyme (dried or fresh)
  • Pepper to taste

Directions

  1. Combine the olive oil with salt pepper, garlic powder, and herbs in a bowl. Mix well.
  2. Score the fatty side of the rack of lamb in a cross-hatch formation  with a sharp knife
  3. Using a spoon or brush, spread the olive oil mixture over both sides of the meat evenly and allow to marinate for 15 minutes to an hour
  4. Heat oven to 450°
  5. Place rack of lamb with fatty side up on a baking tray covered with aluminum foil or parchment paper. Roast for 30 minutes
  6. Remove from oven, allowed to rest for 10 minutes. Slice and serve

RECIPE: One Pan Oven Baked Chicken Thighs with Potatoes and Asparagus

One pan dishes are wonderful because they are usually fast, easy and with minimum cleanup. They are also popular because they are delicious. This tasty recipe for chicken thighs is a good example of all facets.

Ingredients

  • 5-6 medium potatoes
  • 1 bunch of asparagus (or Brussel sprouts)
  • 4-6 bone-in skin-on chicken thighs
  • 1 tablespoon Garlic powder
  • 1 tablespoon Oregano or rosemary
  • 1 tablespoon Salt
  • 1 teaspoon Pepper
  • 1/2 lime
  • Optional: 1 tablespoon of Mola Foods spice blends (any)

Instructions

Take 5-6 medium sized potatoes and dice into large pieces. Cut woody bottoms off of asparagus stalks, then cut each stalk in half.

Add 3-5 Tablespoons of olive oil to oven safe skillet or pan, sprinkle into oil 1 tablespoon of garlic powder, 1 tablespoon of salt and pepper, 1 tablespoon of rosemary or oregano, and 1 tablespoon of remaining spices. Lightly stir slices to distribute, then turn stove to high to heat olive oil.

Preheat oven to 425 degrees

Add thighs to heated oil in pan with skin down and cook for 5 minutes until skin is crispy.

Remove thighs from skillet.

Add diced potatoes and asparagus to bottom of pan.

Place thighs skin up on top of vegetables so they do not touch skillet

Add 1/2 to 2/3 cup of water to skillet. Make sure water level does not reach chicken thighs perched on top of vegetables.

Optional: add 1/2 of lime or lemon to center of pan, cut side down 

Place skillet in oven, then cook for 45-55 minutes

Remove from oven, squeeze lime juice from roasted lime into broth

Serves 3-5

Egg muffins only take a few minutes to make, they don’t require any skillets or pans, just a muffin tin and a bowl, and they are delicious. Much more delicious than you might think.

If you’re a fan of Instagram or Twitter, and even Snapchat, you might’ve seen photos of this delightful brunch breakfast treat. Don’t let those fool you, once you start making these you’ll realize they are not just a fad. In fact, once you start serving these you might realize that you’ve become a bit of a kitchen hero.

Here is our recipe for Homemade egg muffins, with Parmesan cheese, turkey bacon, and onions.

INGREDIENTS

6 eggs
A half a cup of Parmesan cheese, or cheddar cheese.
1/2 onion, diced.
Choice: four strips of cooked bacon or three slices of turkey, sandwich style.
1 tsp Garlic powder
Salt-and-pepper
Optional: , mustard powder, and paprika.
A muffin tin

DIRECTIONS

Literally it’s so easy, you just add some tasty things like bacon, diced avocado, diced onions, is the turkey, to the bottom of your muffin tins, including cheese, then beat some eggs in a bowl, one for each tin, then the salt and pepper and pour them into each tin, total of 350° for 20 Minutes.

Pair with vegan, regular or turkey bacon.
